Lemon-Coconut Frozen Kefir

1 Quart Raw Kefir

¼ cup fresh squeezed Meyer Lemon juice

2 ripe bananas

5-6 medjool dates pitted

½ cup canned coconut milk

½ cup shredded coconut

Combine all ingredients in a high-speed blender and blend until well combined. Transfer mixture to an ice cream maker. I use one by Cuisinart, but any will do!

Follow the directions on your particular ice cream maker. Store any leftovers in glass containers in the freezer.

 

A word on raw dairy products:

Two proteins found in dairy products: casein and whey. Milk, in its original status typically has a fairly even balance of the two proteins and may even be slightly whey dominant.  The process of homogenization and pasteurization changes all of that and makes dairy products casein dominant. Casein triggers the opioid receptors in the brain and can lead to hyperactivity and a false sense of euphoria. This is a major reason why I hear over and over from my clients that they could never give up dairy products.

While I am not advocating the frequent consumption of dairy products, the occasional serving of fermented raw dairy products I find useful for those who tolerate dairy. Fermented dairy carries necessary gut-healthy good bacteria (otherwise known as probiotics). These good bacteria help to keep the intestinal tract healthy, are helpful in regulating bowel movements, upregulating the immune system and fighting against infections.

So for those who can enjoy the occasional serving of dairy, enjoy responsibly!
