Basil Pesto Eggs


3 Pastured Eggs

1 cup pre-steamed broccoli –This works very well for that leftover broccoli from last night’s dinner or simply steam the broccoli for 2-3 minutes before adding to the frying pan.

2 green onions chopped

½ avocado

1-2 TBSP Nut-free Pesto Basil

1-2 tbsp Ghee

Sea Salt

Black Pepper

Make it happen!

  1. Melt the Ghee in the pan
  2. Turn the heat to LOW
  3. Place broccoli in a single layer in the pan
  4. GENTLY lay the eggs across the broccoli.

The goal is to not let the yolks break open since we are not doing a scramble here. While we can’t completely prevent the cholesterol in the eggs from oxidizing, we can minimize the process by cooking on a LOW heat for a little longer and not scrambling the yolk.

  1. Add Sea Salt and Pepper
  2. Cover with lid and allow to cook for about 3-5 minutes or until the whites are no longer runny. (Unless you like them that way then cook until set)
  3. Grab your spatula and get that food out of the pan!
  4. Once done, use sliced avocado and green onions for garnish
  5. Drizzle Pesto Basil over eggs and broccoli.
